Open Samosa Pie

This incredibly quick, easy and tasty take on the traditional Indian Samosa, is a sure-fire way to delight the entire family, ensuring  a good healthy dose of fresh vegetables in combination with a lean lamb mince.

Ingredients:

3 Sheets Filo Pastry
1 Onion
500g Lean Lamb Mince
300g Grated Sweet Potato
100g Frozen Peas
Juice 1/2 Lemon
2 Garlic Cloves
Small Bunch Coriander, chopped
2 tbsp Garam Masala
2 tbsp Turmeric

  1. Heat the Oven to 170C fan. Heat a true non-stick pan and fry the onion and mince until deep brown (never grey) for about 8-10 minutes. Stir the turmeric with the grated potato and mix well. Stir the garam masala into the mince and then toss in the sweet potato mixture. Cook for another 5-8 minutes to take the weight out of the potato mix. Then throw in the lemon juice, peas and seasoning. Combine well.
  2. Put the entire mix into a baking dish and scrunch over the filo sheets, having first rubbed with a small amount of vegetable oil. Sprinkle some extra cumin seeds on top and bake for 10-15 minutes until the topping is crisp and golden.
